National Geographic Adventure Magazine has this fantastic list the Best Adventure Vacations for 2006:

I can offer a bit of insight into Kayaking Southeast Asia (#1), Climbing the Karakoram Range (#2), Rafting the Mekong (#3), Jungle Hiking in India (#4), Hiking Red-Rock New Mexico (#15) and the Arctic Safari (#24).
